Lamb chops are delicious to eat and is quick to cook. It is easily available in any good meat shop. These are so versatile that it can be eaten as appetizers as well as main course

There are many ways to prepare them like baking in oven or grilling them. Ingredients like garlic, lemon, rosemary go very well with it. But in this recipe, I have used spices to marinate the chops to give it an Indian flavor.

Ingredients Needed:

  1. Lamb Chops – 6
  2. Lemon – 1
  3. Curd – 2 tbsp
  4. Ginger garlic paste – 1tbsp
  5. Coriander powder – 2 tsp
  6. Red chilli powder – 1-2 tsp (based on its hotness and taste)
  7. Fennel powder – 2 tsp
  8. Oil – 2 tbsp
  9. Salt
  10. Black pepper
  11. Butter
  12. Mint leaves – 10 – 15
  13. Green chillies – 1-2
  14. All purpose flour (maida) –  1 tsp

Steps:

  1. For marinating the lamb, squeeze ½ lemon in a big bowl. Add the spices – Fennel powder, Coriander Powder, Chilli Powder, Black Pepper and Ginger Garlic paste into the bowl. Mix well.
  2. Once the marinate is ready, we can add the lamb chops. Coat the meat well with the spiced rub.
  3. Add 1 tbsp oil and curd. Mix well again. Curd and lemon tenderize the meat. It should be added in balance as both can add sourness to the dish.
  4. Let it marinate for an hour.
  5. In the meantime we can prepare the mint sauce. For this blend the mint leaves, green chillies, rest of lemon juice, salt, pepper and oil. And it is ready.
  6. Preheat the oven to 400 degree fahrenheit.
  7. In an oven safe, normal or grill (gives nice charred marks) pan, melt some butter just enough to coat the pan all around.
  8. Once the pan is hot, place the lamp chops in it. There should be sizzling sound.
  9. Cook each of the lamb chops 2-3 mins per side.
  10. Then place the pan in oven for 5-7 minutes.
  11. Let it rest for few minutes, once it is out of oven.
  12. Serve with the mint sauce and your favorite veggies

Useful Tip:

If you have a cooking thermometer, adjust the cooking time so that the internal temperature of the meat is as below:

  • 145 degree fahrenheit for medium rare
  • 160 degree fahrenheit for medium
